Yummy slow-cooker recipes

My kids might be filthy, as well as my house, but Shane is keeping us well fed as I recover from surgery. Here are a couple of recipes he has used, and I must say they are pretty tasty!

Beef Diablo

4 lbs. pot roast
3 potatoes, peeled/sliced
1 onion, sliced
2 tbsp. flour
1 tbsp. prepared mustard
1 tbsp. chili sauce
1 tbsp. Worcestershire sauce
1 tsp. vinegar
1 tsp. sugar

Trim all excess fat from roast. Place potatoes and onion in bottom of crock pot. Make a smooth paste of flour, mustard, chili sauce, Worcestershire, vinegar and sugar. Spread over top of roast. Place roast over potatoes and onions. Cook and cover on low setting for 10-12 hours(high 5 to 6).

Cheesy Meat Loaf

17 cheese crackers
1 sm. onion, finely chopped
2 tbsp. green pepper, minced
1/4 c. chili sauce
1/2 c. milk
2 eggs, slightly beaten
3/4 tsp. salt
1/8 tsp. pepper
1 1/2 lbs lean ground beef

Crush crackers with rolling pin until crumbled. In mixing bowl, combine crumbs with onion, green pepper, chili sauce, milk, eggs, salt and pepper. Mix in ground beef. Form into 6 or 7 inch round loaf. Place in crock pot. Cover and cook on low for 6 to 8 hours.

Is that the meatloaf cooking when I left? It smelled sooooo good, I should have stayed longer.

Glad your recovery is going good for you. The recipes sound yummy! I'm going to have to try them.
